A Little About What Litmus Paper Is
Filter paper stained with a substance called “litmus” , used to indicate the acidity or alkalinity of a substance.
Traditionally, this has been made with a natural water-soluble dye obtained from lichens. In this test, we will be using a natural, tasteless, odorless pigment found in purple flowers and vegetables called Anthocyanin. Like the stuff from lichens, the anthocyanins are water-soluble vacuolar pigments that may appear red, purple, or blue depending on the pH levels of the substance.
